So what's the new plan..?
The first thing to do was to find a reliable host. Rimuhosting came highly recommended - their support being allegedly second to none, so I took on a VPS deal with them, and very glad I am about it too.
I have had Ubuntu installed as OS, the reasoning being that I have a copy of Ubuntu at home, and can fiddle around locally, knowing that the learning curve I am making will be useful for me on my server.
Unlike most packages sold by ISP's, rimuhosting gives you the bare bones and you have to set it all up yourself, a daunting task for one not particularly versed in linux.
My experience with Rimuhostings support staff has been second to none, esp. as my questions / problems were real newbie stuff. If there is any shortcomings in their support, it may be that they sometimes don't realise just how ignorant you might be, and do realise you could be doing something really stupid...

What's this about?
We're in the process of changing my wife's business site from www.theaeastheticsclinic.co.za to www.theaestheticscentre.co.za. Why? The govt, in it's wisdom, says nothing less than a hospital can be called a clinic. So there you go.
www.theaestheticsclinic.co.za I threw together overnight, hosted on a server made of chewing gum and paperclips, powered by low grade kerosine. It's brought in probably 95% of the not inconsiderable business that my wife does, and has to go down in history as probably one of the most cost effective marketing exercises ever.
Emails I had routed through gmail and the whole thing was a bit like a house of cards - which is probably appropriate for a start-up business - don't spend money until you have it.
However, now that the business has become established, it is time to get a bit more professional. And having to change the name from The Aesthetics Clinic to The Aesthetics Centre is a good enough trigger to do a re-vamp.
